A local steak well-suited for a variety of preparations. This grass-fed sirloin can be enjoyed on the grill, braised, stir-fried, or added to a salad.

SMCC's grass-fed, pasture finished beef is raised in accordance with Gap 4 animal welfare practices. As such, their cows are always given adequate access to pasture, are hormone free and processed at a Georgia processor that uses no chemicals.

SMCC's cattle are rotated from pasture to pasture in order to regenerate the earth. For the first 1.5 years their only food is grass in the organic Dublin pastures. In the final 2-4 months, they remain on pasture, but are offered a choice between grass and non GMO brewers grains from local Georgia breweries. This fits in nicely as a part of their zero waste initiative. The brewers grains are comprised of oats, barley, and hops. In addition to grass, the cows enjoy (depending on the season) red clover, wild kale, young peanuts and fennel weed, all of which add to the unique flavor of their pasture finish.
